Here's how to spot a high-quality extra virgin olive oil:

1. Packaging

Start with the packaging. Quality EVOO should come in dark glass bottles, as light can oxidize the oil and degrade its quality. Ensure the bottle is sealed with an airtight cap, ideally one that includes an anti-refill mechanism to prevent contamination.

2. Label

The label should explicitly state, "Superior category olive oil obtained directly from olives and solely by mechanical means." Look for information about the oil's origin, preferably specifying it’s made from Italian olives. A detailed label that lists the olive variety, producer's name, batch number, and harvest season indicates a commitment to quality.

3. Pric

Price is a key indicator of quality. Be cautious of oils priced below 15 euros per liter, as such prices often signal poor quality. This threshold reflects the cost of producing genuine high-quality EVOO, especially if you're buying it in Italy.

4. Acidity

Check the acidity level. Quality EVOO should have an acidity below 0.8%, with the best oils being below 0.3 or 0.4%. This, along with the peroxide value, indicates the freshness and purity of the oil.

5. Tasting

A proper tasting is essential. Quality oil should smell fresh and grassy, with a taste that includes a noticeable bitterness and spiciness—qualities absent in low-quality oils.

6. Color

In professional tastings, color is not a quality parameter since it can be deceptive. Professional tasters use blue glasses to obscure the oil's color, focusing instead on taste and aroma. However, abnormal colors like reddish or brownish hues can indicate oxidation and rancidity.
